Kimchee Love. {KOREA}

Dear Kimchee: You are laid out in front of me on a small plate and I pick you up with silver chopsticks. You burn my mouth with your heat and you remind me of places I have never been. After eating a few pieces of you, I now want you before every meal. You have replaced my bowl of peanuts; you have become my new version of chips and salsa. You are simple; you are fermented; you are ancient. I overlook the radishes and the seaweed soup because you are all I see. You are a perfect accompaniment with Kalbi, Kimbab and Shabu-Shabu, but I also like you standing alone, spicy and proud, at home in your little white dish. Kimchee, I miss you and now that I have tasted you, my palate will never be the same.
